This recipe is so simple and good.
Preheat oven to 425.
Cut 2-3 zucchinis into french fry size strips.
Pour 1 cup of Panko italian flavor bread crumbs, and 1/4 cup of parmesan cheese, into a bowl.
In separate bowl mix up two eggs
Your going to want to dry off your slices of zucchini really well so the egg stick to them, if you want you can mix a little flower in with them so the egg sticks better.
Add a little bit of your bread crumb mix to a small plate (about 2 tbs) at a time. You only want to add a little bit to the plate so the mixture doesn't get to moist from the egg. If it does it won't stick very well to the zucchini sticks.
Dip zucchini in egg, let the excess of the egg drip off.
Roll in breadcrumb mixture. Add more breadcrumbs to plate as needed.
Place on baking sheet.
Cook at 425 for about 12-17 min.
